Cooking corner – Stir fry chicken noodles
Ingredients
250g
dried egg noodles
25ml
vegetable oil
3
eggs
400g
chopped vegetables such as cabbage, carrot, bean sprout
150g
grilled chicken breast, diced
15mg soy sauce
Method
Boil noodles in pot of water
Drain well when cooked
Lightly beat eggs
Heat a wok or large frying pan with half of the oil
Add eggs and cook until lightly scrambled
Remove eggs and roughly chop
Add rest of oil to wok or frying pan
Add vegetables and stir fry with soy sauce until just cooked
Add noodles, egg and chicken
Continue to cook until all cooked and hot through
