Tuna salad 

Ingredients

¼ packet, wholemeal pasta

1 onion, peeled, finely chopped

1 capsicum, finely chopped

½ cucumber, finely chopped

1 can tomatoes, drained  and chopped

½ cup fresh herbs, finely chopped

1 x 300g can of tuna in spring water, drained and flaked

2 tbsp lemon juice

Method

  1. Fill a large pot with water and bring to the boil
  2. Stir in the pasta, return to a boil. Leave uncovered, stirring occasionally until the pasta has cooked through
  3. Drain and rinse the pasta in cold water
  4. In a large bowl, mix cooked pasta with onion, capsicum, cucumber, tomato, herbs, tuna and lemon juice
  5. Toss lightly until thoroughly combined.
