Sausage and potato frittata
Ingredients
6 Scotty’s sausages
1 onion, diced
5 -6 (500gr) potatoes cooked and sliced
6 eggs
½ cup milk
½ cup cheddar cheese grated
1 can tomatoes drained and chopped
Handful of basil leaves
Dash of oil

Method
Preheat oven to 160 degrees.
Grease oven proof dish.
Oil fry pan and part cook sausages the skin and cut into 6 or 7 slices.
Fry sausage slices and onion until onion is soft and sausage pieces browned.
Layer sausage, onion and potato slices in prepared dish.
Whisk egg and milk together and pour over sausage and vegetables.
Sprinkle over tomatoes, basil and grated cheese.
Season if you wish.
Bake in pre heated oven until top is golden brown (aprox 30 minutes).
