Asparagus lunch
Ingredients.
One bunch asparagus
2 large eggs
Olive oil
Lettuce or rocket
Hard cheese
Salad dressing of your choice
Method
Oil the asparagus and season with salt and pepper
Grill over high heat until tender and charred in spots –
about 5 minutes.
Keep warm while frying the eggs until whites are firm and yolks still runny.
On two plates make a bed of lettuce, on which dribble salad dressing.
Arrange half of the asparagus and an egg on each
Grate cheese coarsely over and serve
