Green tomato chutney
An easy recipe to put all the tomatoes which will no longer ripen to a good use. This is a sweet/piquant chutney which will add interest to a meal.
Ingredients:
2kg green tomatoes cut up.
500gr onions finely chopped.
250gr sultanas.
3 tbsp mustard seed.
1 tbsp ground allspice.
1 tbsp salt.
2 ½ cups white vinegar.
500gr sugar
Method
Combine all the ingredients in a large saucepan bring to the boil, stirring until all the sugar is dissolved.
Then cook gently uncovered for 1 ½ to 2 hours – until the liquid is evaporated and the tomatoes have pulped
Pour into jars and seal. For the very best chutney it is best left to mature, for up to two months.
Makes aprox 3.5 litres.
