Christmas Mince pies
(It is super easy to make these delicious pies)
Mince Ingredients
125gr seeded raisins
125gr Sultanas
250gr Currants
30 gr Candied peel
200gr Granny Smith apples
125gr Brown sugar
pinch salt
¼ teaspoon mixed spice
½ lemon zest and juice
2tbsp brandy or Port

Method
Put raisins, sultanas, peel and apples cut into chunks into a food processor. Process until chopped but not completely pulverised. Turn into large bowl and add rest of ingredients, except brandy. Mix until combined then add brandy. Roll sweet short pastry (available at super market) to ½ cm thickness. Cut circles to fit size of your tart tins an ease into place. Take a generous teaspoonful of mince to fill each case. And cut smaller pastry circles to cover tarts. Leave tarts to rest at room temperature for at least half an hour before cooking at 200C until pastry turns golden brown. Dust with icing sugar.
Makes at least 18 tarts
