Cooking corner
Pea, parsley, mint and fetta fritters.
Ingredients
1 shallot or half a small onion
1 tsp butter
250gr baby peas thawed
½ cup roughly chopped parsley and mint
100gr crumbed feta
4 tbsp vegetable oil
3 eggs
2 tbsp flour
1 tsp baking powder
Salt and pepper to taste.
Method
Cook shallot or onion in frypan on gentle heat until translucent.
Tip into food processor and pulse until almost smooth
Add eggs and repeat pulse
Add the flour and baking powder and mix to in corporate
Tip mix into bowl and add the crumbled feta.
Mix gently so as to retain the cheese lumps
Add salt and pepper to taste
To cook: heat half of the oil in a frying pan until quite hot. Add tablespoons of mixture then cook gently for about 3 – 4 minutes each side.
Add more oil as necessary.
Note If you don’t have a processor or blender mash the peas and chop the herbs more finely then mix all ingredients together . The resulting fritters will be chunkier but just as good.
